- Preheat oven to 425.
- Rinse the groosling and pat it dry. Rub salt into the skin on all sides, then place breast up in a roasting pan.
- Roast for 1 hour to 1 & 1/2 hours, to an internal temperature of 175 degrees, or until the juices from the thigh run clear when pierced.
